Rosé Oysters a la Atlantic Shores

Chef Kyle created this beautiful, delicious starter for our 2019 Winter Wine Fest. It gets your taste buds working with tangy vinegar, sweet and dry from the Brut Rose, and saltiness from the fresh oyster.

Prepare this as the perfect starter for a romantic Valentine’s Day dinner.

Yields1 Serving
Ingredients
 fresh oysters
Brut Rosé Mignonette Sauce Ingredients
 ¾ cup red wine vinegar
 1 ¼ cups Brut Rosé
2 tbsp shallot, fresh, fine dice
fresh cracked black pepper to taste
Rose Chips Ingredients
2 roses fresh, remove petals from stem
Rose Chips Directions
1

On a large plate that will fit in the microwave; put down two sheets of paper towels.
Spread the rose petals on the plate and try not to stack on top of each other.
Turn the microwave on high for about 1.5-2 minutes. The rose petal will start to dry out. If the petals are still soft after the 2 minutes put in for another 30 seconds.
When the petals are finished in the microwave, place on a sheet pan and let dry for 28-48 hours on a half sheet pan.
